Nature has a way of revealing itself in the simplest and most unsuspecting ways. A leaf of lettuce, seemingly unremarkable, at closer look displays an extraordinary design. Through it’s delicate veins flows a pigment that is necessary for the plant to grow and mature. This green pigment has a make up similar to our own blood, and an array of benefits to the body. Coincidence? I don’t think so…just brilliance. The ability to fight cancer, to cleanse and rebuild the blood…these are just a few of the benefits of a chlorophyll rich diet.
It is my belief that no matter what ailment, deficiency, or imbalance is present in the body, freshly made green juice is among the most effective remedies to repair or replace what has been damaged or lost. It is the ideal source of life-giving nutrition, and one of the best ways to flood the body with an abundance of vitamins and minerals. This is especially true of a body that has experienced difficulty with digesting or absorbing at a sufficient level. Nothing compares to the bioavailability of juice, which starts to absorb the moment it reaches the mouth.
There is forever debate about whether juices or smoothies are better for overall health. While some argue that the most important factor is absorption, others feel that it is one’s daily fiber intake. In my opinion, it depends completely on what you are working towards. If you feel that you are well nourished and generally in good health, then smoothies may be sufficient for you as a way to maintain. For others, consuming green juice may be more beneficial in helping to overcome a deficiency or achieving a better level of health. Giving the body the fuel it needs in order to rebuild…what a great way to start every day.
My Daily Vitamin (Green Juice)
Yield 2-3 cups
- 6-8 lettuce leaves (any combination of romaine, red leaf lettuce, kale, etc.)
- 1 cucumber
- 2 ribs celery
- 1/2 lemon
- 1 green apple
- 4-6 sprigs parsley
- 4-6 sprigs cilantro
- 2-3 sprigs mint
- Process all ingredients through a juicer, beginning with the softest/juiciest items, and ending with the most fibrous items so they can push any remnants through the juicer.
- Pour juice through a fine mesh strainer into a glass.
